The Organic Smokehouse:

Award-winning smokehouse operates from the village of Clunbury near to the market town of Ludlow in Shropshire. For us at The Organic Smokehouse, the smoking of produce is less about commercial food production and more about the continuance of a centuries old craft. All of our smoking is carried out without any mechanical intervention using the traditional 'draft method' with air-dried, naturally fallen, Shropshire Oak. It is a slow process, giving a greater depth of flavour to our products.

Chickens Ducks, Geese, Turkeys & Guinea Fowl Free range, Additive free, GMO free,Organically produced in beautiful West Wales. Steve Merritt & Juliet Fay with their 2 young children have created a small scale organic poultry enterprise at Llywncrychyddod Farm.Their poultry has a wonderful flavour which is the result of the organic system they follow and the care & energy that goes into it.

Welsh Farm Organics:

Tyn Y Fron, is a traditional Welsh long house set amongst the gentle Montgomeryshire hills, where their stock graze freely. It was here that their dream was born, which eventually became Welsh Farm Organics. Jonathan, having farmed on the family farm in the Dugwm Valley all his life, noticed a gap in the market for more affordable organic meat, so in 2001 the obtained Organic status. To back this up, they began planning for a processing unit back in July 2001. The lack of availability of good quality organic Welsh beef and lamb was apparent to Jonathan as a farmer and he felt the public/consumer deserved to have full traceability of their meat, to experience meat tasting as it should and be able to buy it without paying the usual, onerous, Organic premium. Thus Welsh Farm Organics was born.

Jonathan and Sally say that at Welsh Farm Organics the aim is to provide the consumer with good quality Welsh beef, pork and lamb, straight from the farm, with 100% traceability and the added bonus of organic status. This means no fertilisers or chemicals are used in connection with the rearing of stock and no overuse of antibiotics. Everything is strictly regulated which is better for you, the consumer, the environment, and of course, the beautiful land that Jonathan and Sally are proud to call home.

Whirley Wines:

In the nineties I spent seven years managing Bibendum restaurant, where, working with one of the best wine lists and menus in the UK, I learnt the importance of matching food and wines and how much fun this can be. In 1999 I left to work a vintage in Barossa, South Australia and travel the vineyards of Australia in an old Ford Falcon Station wagon, from Mudgee New South Wales across to The Great Southern and Margaret River vineyards of Western Australia. This “hands on” experience was paramount in understanding the extraordinary range of varietals available in Australia as well as the amazing quality of wines coming out of these individual vineyards.
